Wow! Just tried out yet another zucchini recipe that turned out GREAT. So here it is in detail:
ZUCCHINI CHOCOLATE BARS
Beat 3 eggs and add 1 c. oil. Then slowly add 2 cups of sugar and beat. Blend in 2 c. grated zucchini.
In another bowl, combine 2-1/4 c. flour, 1/2 c. cocoa and 1 t. baking soda.
Add dry ingredients to egg mixture, then stir in 1 T. white vinegar. At this point, I add a cup of chopped nuts.
Put in 9 X 13 ungreased pan and bake for 1 hour at 350 degrees.
You can SEE the chunks of zucchini!
These are SO easy to make and yummy even without frosting---almost more of a cake than a brownie in texture. There are so many wonderful ways to use zucchini---and it’s a good thing, ‘cause we got tons of them!

Looks great.. NOT baking anything these days.. has been just too hot to heat up my kitchen. Will keep this recipe though for when I do.
